- ½ cup brown sugar
- ½ cup butter, softened
- 2 large eggs
- 1 tsp vanilla
- 1 cup mashed ripe bananas (about 2–3 bananas)
- ½ cup buttermilk
- 1 tsp baking soda
- 2 cups all-purpose flour
- ½ tsp kosher salt
- ½ cup butter, softened at room temperature (for frosting)
- 8 oz cream cheese, softened at room temperature
- 3½ cups powdered sugar, sifted
- 1 tsp vanilla (for frosting)
Instructions
- Cream together sugar, brown sugar, and butter until light and fluffy.
- Add eggs one at a time, then vanilla and mashed bananas. Mix well.
- In a separate bowl, whisk together baking soda, flour, and salt.
- Add dry ingredients alternately with buttermilk into the banana mixture, mixing just until combined.
- Pour batter into a greased or lined 9×13-inch baking pan.
- Bake at 350°F (175°C) for 25–30 minutes or until a toothpick inserted comes out clean. Let cool completely.
- Prepare the frosting by beating butter and cream cheese until smooth and creamy.
- Gradually add powdered sugar and vanilla, beating until light and fluffy.
- Spread frosting evenly over cooled banana bars.
- Slice into squares and serve.
Notes
- Use overripe bananas for maximum sweetness and flavor.
- Bars can be stored in the refrigerator for up to 5 days; bring to room temperature before serving.
- Optional: Add chopped walnuts on top of the frosting for crunch.
