  1. 1 onion, chopped
  2. 1 1/4 lb. boneless skinless chicken breasts
  3. 1 tsp. dried oregano
  4. Kosher salt, to taste
  5. Freshly ground black pepper, to taste
  6. 2 (10.5-oz.) cans cream of chicken soup
  7. 2 cups low-sodium chicken broth
  8. 4 sprigs fresh thyme
  9. 1 bay leaf
  10. 2 stalks celery, chopped
  11. 2 large carrots, peeled and chopped
  12. 1 cup frozen peas, thawed
  13. 3 cloves garlic, minced
  14. 1 (16.3-oz.) can refrigerated biscuits

Instructions

  • Scatter chopped onion in the bottom of a large slow cooker, then top with chicken breasts. Season with dried oregano, kosher salt, and freshly ground black pepper.
  • Pour the cream of chicken soup and chicken broth over the chicken, then add fresh thyme and bay leaf.
  • Cover and cook on High for about 3 hours or until the chicken is cooked through.
  • Discard the thyme and bay leaf. Shred the chicken with two forks.
  • Stir in chopped celery, carrots, peas, and minced garlic.
  • Cut or tear the refrigerated biscuits into small bite-sized pieces and stir into the chicken mixture. Spoon the liquid over the biscuits to ensure they cook evenly.
  • Cook on High for another 1 to 1 1/2 hours, stirring every 30 minutes, until the vegetables are tender, and the biscuits are cooked through.
  • Serve hot and enjoy your comforting homemade chicken and dumplings!

Notes

  • If you prefer a thicker consistency, let the soup cook for an extra 15-20 minutes to reduce the liquid.
  • You can also use a rotisserie chicken for added flavor and convenience.
