- 2 tbsp butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 2 medium potatoes, diced
- 4 cups seafood broth
- 1 cup heavy cream
- ½ lb haddock, cut into chunks
- ½ lb shrimp, peeled and deveined
- ½ lb scallops
- ½ cup cooked lobster meat (optional)
- 1 cup corn kernels
- ½ tsp dried thyme
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- In a large pot, melt butter over medium heat. Add onion, garlic, and celery. Sauté until soft.
- Add diced potatoes and seafood broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 10 minutes).
- Pour in heavy cream and stir well.
- Add haddock, shrimp, scallops, and lobster (if using). Simmer for 5-7 minutes until seafood is cooked through.
- Stir in corn, thyme, salt, and pepper. Let cook for another 2 minutes.
- Garnish with fresh parsley and serve hot.
Notes
- You can use any firm white fish like cod or halibut if haddock is unavailable.
- For an extra creamy texture, you can add a little more heavy cream or some milk.
- If you’re not using lobster, you can replace it with more shrimp or scallops for added seafood flavor.
- This chowder pairs beautifully with crusty bread for dipping.
