Ingredients

Scale
  1. 8 oz cream cheese (softened)

  2. 2 cups heavy whipping cream

  3. 1 box sugar-free lemon pudding mix

  4. ½ cup lemon juice (freshly squeezed)

  5. ½ tsp vanilla extract

  6. 1 pecan pie crust (store-bought or homemade)

  7. Whipped topping (for garnish)

Instructions

  • Melt the cream cheese in a bowl until soft and creamy.

  • Add the heavy whipping cream and sugar-free lemon pudding mix. Mix until smooth and fully combined.

  • Stir in the lemon juice and vanilla extract. Mix until the mixture is thick and creamy.

  • Pour the mixture into the pecan pie crust and smooth out the top.

  • Refrigerate for 30 minutes to set and cool.

  • After chilling, top with whipped topping and enjoy!

Notes

  • For an extra tangy flavor, you can add a little more lemon juice to the mixture.

  • You can also use a graham cracker crust for a different texture.

  • If you prefer a thicker texture, let the pie chill for longer (1-2 hours).
