Description

A fun and easy no-bake dessert that combines vanilla cookies, creamy cheesecake filling, and a burst of birthday fun with rainbow sprinkles! This no-bake treat is the perfect way to celebrate without turning on the oven!

    • ¾ cup powdered sugar

    • 16 ounces frozen whipped topping, Cool Whip, thawed and divided (1 cup, 1 cup, and remainder)
    • ¼ cup rainbow sprinkles (plus more for garnish)

    For the pudding layer:

    1. 6.8 ounces vanilla-flavored instant pudding mix (or white chocolate pudding)
    2. 2 cups whole milk

Instructions

  • Prepare the Crust:

    • In a food processor or using a plastic bag and rolling pin, crush the vanilla sandwich cookies into fine crumbs.
    • In a bowl, combine the crushed cookies with melted butter. Stir until the crumbs are fully coated with butter.
    • Grease a 9×13-inch baking dish with butter and press the cookie mixture evenly into the bottom of the dish to form a crust. Refrigerate to set while preparing the next layers.
  • Make the Cheesecake Layer:

    • In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy.
    • Fold in 1 cup of the Cool Whip and ¼ cup of rainbow sprinkles. Mix until well combined.
    • Spread the cheesecake layer evenly over the chilled crust.
  • Make the Pudding Layer:

    • In a separate bowl, whisk together the vanilla pudding mix with 2 cups of milk until it thickens.
    • Gently fold in the remaining 1 cup of Cool Whip until fully combined.
    • Spread the pudding mixture evenly over the cheesecake layer.
  • Chill and Garnish:

    • Top with the remaining Cool Whip and sprinkle with the remaining rainbow sprinkles.
    • Refrigerate for at least 4 hours or overnight to let the layers set and the dessert firm up.
