- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 16 ounces frozen whipped topping, Cool Whip, thawed and divided (1 cup, 1 cup, and remainder)
- ¼ cup rainbow sprinkles (plus more for garnish)
For the pudding layer:
- 6.8 ounces vanilla-flavored instant pudding mix (or white chocolate pudding)
- 2 cups whole milk

Prepare the Crust:
- In a food processor or using a plastic bag and rolling pin, crush the vanilla sandwich cookies into fine crumbs.
- In a bowl, combine the crushed cookies with melted butter. Stir until the crumbs are fully coated with butter.
- Grease a 9×13-inch baking dish with butter and press the cookie mixture evenly into the bottom of the dish to form a crust. Refrigerate to set while preparing the next layers.

Make the Cheesecake Layer:
- In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy.
- Fold in 1 cup of the Cool Whip and ¼ cup of rainbow sprinkles. Mix until well combined.
- Spread the cheesecake layer evenly over the chilled crust.

- In a separate bowl, whisk together the vanilla pudding mix with 2 cups of milk until it thickens.
- Gently fold in the remaining 1 cup of Cool Whip until fully combined.
- Spread the pudding mixture evenly over the cheesecake layer.

- Top with the remaining Cool Whip and sprinkle with the remaining rainbow sprinkles.
