Instructions
- In a medium bowl, mash the ripe banana until smooth.
- Add the rolled oats, peanut butter (or almond butter), honey (or maple syrup), ground cinnamon, and vanilla extract. Stir well to combine.
- If using, add the chia seeds or flaxseeds and mix until fully incorporated.
- Roll the mixture into small bite-sized balls, about 1 inch in diameter.
- Place the energy bites on a parchment-lined tray or plate.
