This Chicken Caldereta is a rich and flavorful Filipino stew made with tender chicken, creamy peanut butter, tomato sauce, and a variety of vegetables. With a savory blend of spices, the dish features bell peppers, carrots, potatoes, olives, and the distinct tang of pickle relish. Perfect for family dinners or special occasions

Ingredients

  1. 1 & ¾ kilograms chicken (cut into pieces)

  2. ½ cup soy sauce

  3. 1 tsp pepper

  4. 180g tomato sauce

  5. 2 bell peppers (sliced)

  6. 3 medium potatoes (peeled and cubed)

  7. 1 medium carrot (peeled and cubed)

  8. 9 cloves garlic (minced)

  9. 1 large onion (chopped)

  10. 3 laurel leaves

  11. Cooking oil (for frying)

  12. Grated cheese (for garnish)

  13. ¼ cup green olives (sliced)

  14. 3 red chilies (sliced)

  15. 3 tbsp pickle relish

  16. 2 cups hot water

  17. 1 tbsp atsuete powder

  18. ½ cup unsweetened peanut butter

Instructions

  • Marinate the chicken: Combine the chicken with soy sauce and pepper. Let it marinate for 30 minutes. Set aside the marinade.

  • Fry the vegetables: Heat oil in a pan and fry the bell peppers for 1 minute. Remove and set aside. Then fry the carrots and potatoes until halfway cooked. Remove from pan.

  • Saute the aromatics: In the same pan, sauté garlic until lightly brown. Add the onion and sauté until translucent.

  • Cook the chicken: Add the marinated chicken and sauté for about 10 minutes or until browned. Pour in the marinade sauce, add the laurel leaves, and tomato sauce. Stir until absorbed.

  • Simmer: Add 2 cups of hot water. Stir, cover, and cook for 15 minutes on medium to low heat.

  • Add peanut butter and spices: Stir in the peanut butter and atsuete powder until dissolved. Simmer for 2 minutes.

  • Add vegetables and cheese: Add the fried carrot, potato, pickle relish, and red chilies. Cook for 10 minutes. Add the grated cheese to taste. Stir and let it cook until the sauce thickens and reduces.

 

  • Finish and serve: Add the green olives and bell peppers, then simmer for 2 more minutes. Serve hot!

Notes

  • You can adjust the amount of grated cheese to your liking for a creamier texture.

 

  • Add more chilies if you prefer a spicier dish.
