  • 1/2 cup Giardiniera (Italian-style pickled vegetable salad)
  • 3/4 cup pitted mixed olives (kalamata & castelvetrano)
  • 1/4 cup chopped roasted red peppers
  • 2 tablespoons parsley leaves
  • 2 tablespoons capers
  • 1 garlic clove, minced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 6 slices prosciutto
  • 6 slices mortadella
  • 6 slices salami
  • 1 baguette
  • 1/2 cup shredded mozzarella
  • Arugula

Instructions

  1. In a food processor, pulse together all olive spread ingredients until finely chopped but still slightly chunky. Set aside.
  2. Slice the baguette lengthwise and hollow out some of the bread from each half if desired.
  3. Spread a generous layer of the olive mixture on both sides of the baguette.
  4. Layer prosciutto, mortadella, salami, and shredded mozzarella over the bottom half.
  5. Top with arugula and the other half of the baguette.
  6. Press sandwich together, slice, and serve. For best flavor, wrap and let rest for 30 minutes before eating.
