- 1/2 cup Giardiniera (Italian-style pickled vegetable salad)
- 3/4 cup pitted mixed olives (kalamata & castelvetrano)
- 1/4 cup chopped roasted red peppers
- 2 tablespoons parsley leaves
- 2 tablespoons capers
- 1 garlic clove, minced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 6 slices prosciutto
- 6 slices mortadella
- 6 slices salami
- 1 baguette
- 1/2 cup shredded mozzarella
- Arugula
Instructions
- In a food processor, pulse together all olive spread ingredients until finely chopped but still slightly chunky. Set aside.
- Slice the baguette lengthwise and hollow out some of the bread from each half if desired.
- Spread a generous layer of the olive mixture on both sides of the baguette.
- Layer prosciutto, mortadella, salami, and shredded mozzarella over the bottom half.
- Top with arugula and the other half of the baguette.
- Press sandwich together, slice, and serve. For best flavor, wrap and let rest for 30 minutes before eating.
