For the Spaghetti:
- 4 ounces spaghetti, noodles broken into 2-inch pieces, cooked
- 1 large egg
- 1 cup sour cream
- 1/4 cup parmesan cheese, grated
- 1/4 teaspoon garlic powder
- 2 cups Monterey Jack cheese, shredded
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 1 (2.8-ounce) can crispy fried onions, divided
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 2-quart baking dish.
- In a large bowl, beat the egg.
- Add the sour cream, parmesan cheese, and garlic powder to the bowl and mix well.
- Stir in the cooked spaghetti, shredded Monterey Jack cheese, spinach, and 1/2 of the crispy fried onions to the egg mixture.
- Pour the spaghetti mixture into the prepared baking dish.
- Bake, covered, for about 30 minutes or until heated through.
- Top with the remaining crispy fried onions.
- Bake uncovered for an additional 5 minutes, or until the onions are golden-brown.
- Serve hot and enjoy!
