This Monterey Chicken Spaghetti is the ultimate comfort food! Packed with tender chicken, creamy Monterey Jack cheese, savory spinach, and a crunchy French Fried Onion topping, it’s a cheesy casserole dish everyone will adore. Perfect for family dinners or potlucks!

    • 12 ounces dried spaghetti (cooked al dente)
    • 4 cups chopped cooked chicken (rotisserie chicken works great!)
    • 1 (16-ounce) container sour cream (for a creamy base)
    • 2 (10.5-ounce) cans unsalted cream of chicken soup
    • 1 (10-ounce) package frozen spinach, thawed and drained (adds a healthy touch)
    • 2 cups shredded Monterey Jack cheese, divided (melty and gooey!)
    • 2 garlic cloves, minced (for a burst of flavor)
    • 1 (6-ounce) can French’s French Fried Onions, divided (crunchy topping)

Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with cooking spray.
  • Prepare the Pasta:
    Cook the spaghetti according to the package directions until al dente. Drain and set aside.
  • Mix Ingredients:
    In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, drained spinach, 1 cup of Monterey Jack cheese, minced garlic, and half a can of French Fried Onions.
  • Combine Pasta and Mixture:
    Add the cooked spaghetti to the chicken mixture and stir until well combined. Pour this mixture into the prepared baking dish.
  • Add Toppings:
    Sprinkle the remaining 1 cup of Monterey Jack cheese over the top of the pasta. Finish by evenly spreading the remaining French Fried Onions on top.
  • Bake:
    Bake uncovered for 40–50 minutes, or until the casserole is hot and bubbly and the onions are golden brown.

Notes

  • Spinach Alternative: If you’re not a fan of spinach, substitute it with sautéed mushrooms or omit entirely.
  • Make-Ahead: Prepare the casserole in advance, refrigerate, and bake when ready. Just add 10–15 minutes to the baking time.
