Instructions

  • Preheat the oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Mix wet ingredients: In a large mixing bowl, cream together the canola oil and 1 ¾ cups of sugar until smooth. Add the molasses and egg, blending until fully incorporated.
  • Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, and cloves.
  • Form the dough: Gradually mix the dry ingredients into the molasses mixture until just combined.
  • Shape and coat: Place the remaining ½ cup of sugar in a small bowl. Using a 2-tablespoon scoop, shape the dough into balls and roll each in the sugar.
  • Bake: Arrange the cookie dough balls on the prepared baking sheets, spacing them at least 2 inches apart. Bake for 10-12 minutes, or until the cookies are golden brown and the tops are slightly cracked.
  • Cool: Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
