This Mixed Berry Cobbler is a classic comfort dessert, combining a medley of juicy berries with a golden, buttery cobbler topping. It’s easy to make and perfect when served warm with a scoop of vanilla ice cream or a dollop of whipped cream

  1. Berry Filling:

    • 4 cups (620g) mixed berries (blueberries, raspberries, strawberries, blackberries)

    • 6 tbsp (90g) unsalted butter, cold & cubed

    • ½ cup (100g) granulated sugar

    • 2 tbsp (20g) cornstarch

    • 1 tbsp lemon juice

    • 1 tsp vanilla extract

    Cobbler Topping:

    • 1 cup (125g) all-purpose flour

    • 1 tsp baking powder

    • ½ tsp salt

    • ¾ cup (150g) granulated sugar

    • ¾ cup (180ml) buttermilk (or milk)

    • ¼ cup (60g) melted butter

    • 1 tsp vanilla extract

    • Zest of 1 lemon

    • Zest of 1 orange

    • 2 tbsp almond flakes (for topping)

    For Serving:

    1. Vanilla ice cream, whipped cream, or mascarpone cream

Instructions

  • Preheat Oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish or a 9-inch pie dish.

  • Prepare Berry Filling: In a bowl, combine berries, sugar, cornstarch, lemon juice, and vanilla. Toss gently, then transfer to the prepared baking dish.

  • Make the Cobbler Topping: In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add buttermilk, melted butter, vanilla extract, lemon zest, and orange zest. Mix until just combined (do not overmix).

  • Assemble & Bake: Drop spoonfuls of cobbler topping over the berry filling, leaving some gaps. Sprinkle with almond flakes for crunch. Bake for 40-45 minutes, until the topping is golden brown and the berry filling is bubbly. If browning too quickly, loosely cover with aluminum foil halfway through baking.

  • Cool & Serve: Let cool for 15 minutes before serving. Enjoy warm with ice cream, whipped cream, or mascarpone cream.

Notes

  • If you prefer a more tart dessert, you can reduce the sugar in the berry filling.

  • For a crunchy topping, you can substitute the almond flakes with chopped pecans or walnuts.

 

  • This cobbler is best served warm.
