This Minty Peas and Onions dish is a fresh, vibrant side that pairs sweet peas with caramelized onions and a hint of mint for a bright, springtime flavor. It’s perfect for Easter, Sunday dinners, or alongside roasted meats.

  1. 2 tbsp unsalted butter or olive oil
  2. 1 small onion, thinly sliced (yellow or shallots work best)
  3. 2 cups fresh or frozen peas
  4. 1/2 tsp salt (or to taste)
  5. 1/4 tsp black pepper
  6. 1 tbsp fresh mint, chopped (or 1 tsp dried mint)
  7. 1/2 tsp lemon zest (optional, for extra freshness)

Instructions

  • Sauté the Onions
    Heat butter or olive oil in a skillet over medium heat. Add the sliced onions and cook for 5-7 minutes, stirring occasionally, until soft and lightly golden.

  • Cook the Peas
    Add the peas to the skillet and stir to coat in the butter and onions. Season with salt and pepper, then cook for 3-5 minutes until the peas are tender but still bright green.

  • Add the Mint & Serve
    Stir in the fresh mint and lemon zest (if using). Cook for 1 more minute, then remove from heat. Serve warm as a side dish to lamb, chicken, or fish.

Notes

  • If using frozen peas, be sure to thaw them before adding to the pan for better texture.
  • You can substitute dried mint for fresh mint if it’s not available, but the flavor may be slightly milder.
  • This dish pairs well with roasted meats, especially lamb or chicken.
