  • 240 ml (1 cup) 2% milk, divided + more for blending*
  • 6 g gelatin
  • 35 ml (2 tbsp) maple syrup
  • 113 g (½ cup) full-fat plain skyr or Greek yogurt**
  • 34 g (1 scoop) vanilla protein powder
  • ¼ tsp mint extract (not peppermint)
  • Pinch of kosher salt
  • Green food coloring (optional)

Optional Toppings

  • Whipped cream
  • Sprinkles

*Add more milk when re-spinning for desired consistency.
**For dairy-free, use a thick coconut yogurt and plant milk of choice.


Instructions

  1. In a small saucepan, gently warm half of the milk and whisk in the gelatin until fully dissolved.
  2. Pour the gelatin mixture into a Ninja Creami pint container. Add the remaining milk, maple syrup, yogurt, protein powder, mint extract, salt, and food coloring (if using).
  3. Blend the mixture until completely smooth, then freeze for 24 hours.
  4. Once frozen, process the pint using the Ninja Creami “Lite Ice Cream” function. Add a splash of milk and re-spin if the texture is crumbly, until creamy and smooth.
  5. Top with whipped cream and sprinkles if desired. Serve immediately and enjoy!

Notes

  • Mint extract adds a fresh flavor—don’t substitute with peppermint, which is much stronger.
  • Re-spinning with a little extra milk helps achieve a softer, shake-like consistency.
  • For a greener look, use a few drops of gel or liquid food coloring. Or blend in fresh spinach for a natural alternative!
  • Customize protein content by adding an extra half scoop of protein powder if desired.
