- 240 ml (1 cup) 2% milk, divided + more for blending*
- 6 g gelatin
- 35 ml (2 tbsp) maple syrup
- 113 g (½ cup) full-fat plain skyr or Greek yogurt**
- 34 g (1 scoop) vanilla protein powder
- ¼ tsp mint extract (not peppermint)
- Pinch of kosher salt
- Green food coloring (optional)

*Add more milk when re-spinning for desired consistency.
**For dairy-free, use a thick coconut yogurt and plant milk of choice.
Instructions
- In a small saucepan, gently warm half of the milk and whisk in the gelatin until fully dissolved.
- Pour the gelatin mixture into a Ninja Creami pint container. Add the remaining milk, maple syrup, yogurt, protein powder, mint extract, salt, and food coloring (if using).
- Blend the mixture until completely smooth, then freeze for 24 hours.
- Once frozen, process the pint using the Ninja Creami “Lite Ice Cream” function. Add a splash of milk and re-spin if the texture is crumbly, until creamy and smooth.
- Top with whipped cream and sprinkles if desired. Serve immediately and enjoy!
Notes
- Mint extract adds a fresh flavor—don’t substitute with peppermint, which is much stronger.
- Re-spinning with a little extra milk helps achieve a softer, shake-like consistency.
- For a greener look, use a few drops of gel or liquid food coloring. Or blend in fresh spinach for a natural alternative!
- Customize protein content by adding an extra half scoop of protein powder if desired.
