Description

These Mini Cheesecake-Stuffed Strawberries are a deliciously refreshing treat that’s perfect for any occasion. With a creamy cheesecake filling, topped with crunchy graham cracker crumbs, these bite-sized desserts are a healthier alternative to traditional cheesecake. Easy to make, they’re perfect for summer parties or as a fun snack

Ingredients

Scale
  1. 20 large fresh strawberries
  2. 8 oz (225g) cream cheese, softened
  3. 1/4 cup (50g) powdered sugar
  4. 1 teaspoon vanilla extract
  5. 1/4 cup (60ml) heavy cream
  6. 1/2 cup (50g) graham cracker crumbs

Instructions

  • Prepare the Strawberries: Begin by washing the strawberries thoroughly. Pat them dry with a paper towel.
  • Remove Tops and Core: Use a paring knife to carefully remove the green tops and create a small cavity in each strawberry, ensuring enough depth to hold the filling.
  • Make the Cheesecake Filling: In a medium-sized bowl, whisk together softened cream cheese and powdered sugar until smooth and creamy.
  • Whip in Cream and Flavor: Add vanilla extract and heavy cream to the mixture. Whip until the filling is light and fluffy.
  • Pipe the Filling: Fill a piping bag or a ziplock bag with the corner snipped with the cheesecake mixture. Pipe the mixture neatly into each strawberry.
  • Top with Graham Cracker Crumbs: Generously sprinkle graham cracker crumbs over the cheesecake-filled strawberries, ensuring a good adherence on top.
  • Chill and Serve: Arrange the strawberries on a serving platter and chill for at least 30 minutes to allow the cheesecake filling to set. Serve and enjoy!

Notes

  • If you want to add a bit of color and extra flavor, you can top the stuffed strawberries with a few fresh mint leaves.
  • For a lighter version, you can use reduced-fat cream cheese or Greek yogurt in place of cream cheese.
  • These can be made a few hours in advance but should be served within 24 hours for best freshness.
  • You can also try using chocolate crumbs or crushed nuts for an alternative topping.
