- About 20 mini Loacker wafers (enough to cover the pan)
For the caramel:
- 1 can sweetened condensed milk
- ½ cup unsalted butter
- ⅔ cup light brown sugar
- ¼ cup corn syrup
- ½ tablespoon vanilla extract
- ¼ teaspoon salt
For the topping:
- 1 cup milk or semi-sweet chocolate, melted
Instructions
- Line a small baking dish with parchment paper and arrange mini Loacker wafers in a single layer to cover the bottom.
- In a saucepan over medium heat, melt butter, then stir in brown sugar, corn syrup, sweetened condensed milk, and salt.
- Bring to a gentle boil, stirring constantly, and cook for 6–8 minutes until thickened and golden.
- Remove from heat and stir in vanilla extract.
- Pour the caramel mixture over the wafers and spread evenly. Let cool slightly.
- Pour the melted chocolate over the caramel layer and smooth the top.
- Refrigerate for at least 2 hours or until set.
- Cut into mini bars and serve chilled or at room temperature.
