This cheesy and comforting Mexican White Trash Casserole is loaded with layers of crushed Doritos, shredded chicken, creamy soup, and tangy sour cream. Perfect for a quick and satisfying meal that the whole family will love.

  • 1 bag Nacho Doritos, crushed
  • 2 cups shredded chicken
  • 2 cups shredded cheese (cheddar or your preferred variety)
  • 1 can cream of chicken soup
  • 1 can Ro’tel tomatoes (with diced green chilies), drained
  • ½ cup sour cream
  • ½ cup milk
  • ½ package taco seasoning

Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C) and grease a 2-quart casserole dish.
  • Mix the Filling: In a bowl, combine the shredded chicken, cream of chicken soup, Ro’tel tomatoes, sour cream, milk, and taco seasoning. Stir well to combine.
  • Layer the Casserole: Spread half of the crushed Doritos on the bottom of the prepared dish. Add half of the chicken mixture on top. Repeat the layers, and top with shredded cheese.
  • Bake: Cover the casserole with foil and bake for 35 minutes. Remove the foil during the last 10 minutes of baking to allow the top to become crispy and golden.
  • Serve: Let the casserole cool for a few minutes before serving. Enjoy!

Notes

  • You can substitute the shredded chicken with ground beef or turkey for a different twist.
  • For a spicier version, use spicy Ro’tel or add some chopped jalapeños to the filling.
