Description

This cheesy and delicious Mexican White Trash Casserole is the ultimate comfort food! Featuring layers of crunchy Doritos, creamy chicken, zesty spices, and melted cheese, it’s a crowd-pleaser perfect for weeknight dinners or potlucks. It’s simple to make, yet full of bold flavors. A family favorite that will have everyone asking for seconds!

Ingredients

Scale
  1. 1 bag Nacho Doritos, crushed
  2. 2 cups shredded chicken
  3. 2 cups shredded cheese (cheddar or a Mexican blend)
  4. 1 can cream of chicken soup
  5. 1 can Ro’tel tomatoes (with diced green chilies)
  6. ½ cup sour cream
  7. ½ cup milk
  8. ½ package taco seasoning

Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C) and grease a 2-quart casserole dish.
  • Mix the Filling: In a large bowl, combine shredded chicken, cream of chicken soup, Ro’tel tomatoes, sour cream, milk, and taco seasoning. Stir until well combined.
  • Layer the Casserole: Spread half of the crushed Doritos on the bottom of the casserole dish. Top with half of the chicken mixture. Repeat the layers and top with shredded cheese if desired.
  • Bake: Cover with foil and bake for 35 minutes. Remove the foil during the last 10 minutes to get a crispy top.
  • Serve: Let the casserole cool for a few minutes before serving. Enjoy this cheesy, crunchy comfort food!

Notes

  • You can use cooked rotisserie chicken for a quicker option.
  • Feel free to use a different flavor of Doritos (such as Cool Ranch) for a twist!
  • If you want a spicier version, try using spicy Ro’tel tomatoes or adding a dash of hot sauce to the chicken mixture.
  • The casserole can be prepared in advance and stored in the fridge for up to 24 hours before baking.
