These Mexican Street Corn Fritters are the perfect snack – crunchy on the outside, cheesy on the inside! Served with lime wedges and a sprinkle of Cotija cheese, these fritters bring the flavors of street corn to your kitchen.

  1. 2 cups corn kernels (fresh, frozen, or canned, drained)
  2. 1/2 cup all-purpose flour
  3. 1/4 cup cornmeal
  4. 1 teaspoon baking powder
  5. 1/2 teaspoon chili powder
  6. 1/2 teaspoon garlic powder
  7. 1/4 teaspoon smoked paprika
  8. 1/4 teaspoon salt
  9. 1/4 teaspoon black pepper
  10. 1/2 cup grated Cotija cheese
  11. 1/4 cup fresh cilantro, chopped
  12. 1 large egg
  13. 1/4 cup milk
  14. Vegetable oil, for frying
  15. Lime wedges, for serving
  16. Additional Cotija cheese, for garnish

Instructions

  • In a large bowl, combine the corn kernels, flour, cornmeal, baking powder, chili powder, garlic powder, smoked paprika, salt, and pepper. Mix until the dry ingredients are well distributed.
  • Stir in the grated Cotija cheese, chopped cilantro, egg, and milk. Mix until a thick batter forms.
  • Heat about 1 inch of vegetable oil in a deep skillet or frying pan over medium heat.
  • Once the oil is hot (around 350°F or 175°C), carefully drop spoonfuls of the batter into the oil, flattening them slightly with the back of the spoon.
  • Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy. Remove from the oil and place them on a paper towel-lined plate to drain excess oil.
  • Serve the fritters warm with lime wedges and a sprinkle of Cotija cheese on top. Enjoy!

Notes

  • For extra flavor, you can add finely chopped jalapeños to the batter.
  • These fritters are best served fresh and hot. However, you can reheat them in the oven for a few minutes to restore their crispiness.
