This creamy and flavorful Mexican Corn Dip is a party favorite! Packed with sweet corn, zesty Rotel, cheddar cheese, and fresh cilantro, it’s perfect for gatherings, game nights, or as a quick appetizer. Serve it with tortilla chips or fresh veggies, and watch it disappear in minutes!

Ingredients

Scale
  • 2 cans Mexicorn, drained
  • 1 can Rotel (regular or hot, drained)
  • 2 cups shredded cheddar cheese
  • 8 green onions, sliced
  • 1 cup mayonnaise
  • 8 oz sour cream
  • 1 bunch fresh cilantro, chopped

Instructions

  • Mix the Base: In a large mixing bowl, combine the mayonnaise and sour cream until smooth.
  • Add Ingredients: Stir in the Mexicorn, Rotel, shredded cheddar cheese, green onions, and cilantro until evenly combined.
  • Chill: Cover and refrigerate for at least 1 hour to let the flavors meld together.
  • Serve: Serve chilled with tortilla chips, crackers, or veggie sticks for dipping. Enjoy!

Notes

  • For extra heat, add diced jalapeños or a pinch of cayenne pepper.
  • To make it lighter, use Greek yogurt instead of sour cream.
  • Garnish with extra cilantro or green onions for a pop of color before serving.
