These Easy Spinach Cottage Cheese Flagels are soft, cheesy, and packed with nutrients from spinach and protein-rich cottage cheese. A fun, healthier twist on classic bagels—no yeast or boiling needed!

- 1 cup cottage cheese
- 1 cup + 2 tbsp all-purpose flour
- 3 tsp baking powder
- ½ tsp salt
- 1 tbsp olive oil
- 2 oz baby spinach, micro chopped
- ½ cup shredded mozzarella cheese
- 1 egg, lightly beaten (for egg wash)
Instructions
- Preheat oven to 375°F and line a large rimmed baking sheet with parchment paper.
- In a mini food processor, pulse the cottage cheese until smooth.
- In a large bowl, combine the processed cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and mozzarella. Mix until a dough forms.
- Shape the dough into a 6-inch long log and divide it into 6 equal pieces.
- Form each piece into a flat circle and use your finger to poke a hole in the center.
- Place the flagels on the prepared baking sheet.
- Brush each with the beaten egg for an egg wash.
- Bake for 22–25 minutes, or until golden brown.
- Transfer the flagels to a wire rack and let cool completely before serving.
Notes
- Use full-fat cottage cheese for best texture and flavor.
- You can add herbs or spices to the dough for extra flavor.
- These flagels are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
