Description

These Easy Spinach Cottage Cheese Flagels are soft, cheesy, and packed with nutrients from spinach and protein-rich cottage cheese. A fun, healthier twist on classic bagels—no yeast or boiling needed!


Ingredients

  • 1 cup cottage cheese
  • 1 cup + 2 tbsp all-purpose flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 tbsp olive oil
  • 2 oz baby spinach, micro chopped
  • ½ cup shredded mozzarella cheese
  • 1 egg, lightly beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F and line a large rimmed baking sheet with parchment paper.
  2. In a mini food processor, pulse the cottage cheese until smooth.
  3. In a large bowl, combine the processed cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and mozzarella. Mix until a dough forms.
  4. Shape the dough into a 6-inch long log and divide it into 6 equal pieces.
  5. Form each piece into a flat circle and use your finger to poke a hole in the center.
  6. Place the flagels on the prepared baking sheet.
  7. Brush each with the beaten egg for an egg wash.
  8. Bake for 22–25 minutes, or until golden brown.
  9. Transfer the flagels to a wire rack and let cool completely before serving.
