Ingredients
Scale
- 2 cups all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup unsalted butter, melted
- 1 cup packed brown sugar
- ½ cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg
- 1 egg yolk
- 2 cups chocolate chips
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F (165°C) and line cookie sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream melted butter, brown sugar, and granulated sugar. Beat in vanilla, egg, and egg yolk until light and creamy.
- Mix in the dry ingredients until just blended. Stir in chocolate chips.
- In a small bowl, beat cream cheese, sugar, and vanilla until smooth for the cheesecake filling.
- Form cookie dough balls, make a small indentation in the center, fill with a spoonful of cheesecake filling, and top with additional dough to seal.
- Place on prepared cookie sheets and bake for 15-18 minutes, or until edges are golden.
- Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Ensure cream cheese is fully softened to avoid lumps in the filling.
- Do not overbake; cookies should look slightly underdone when removed from the oven.
- Chill dough if it becomes too soft to handle while assembling.
