  1. 1 cup (226g) unsalted butter, softened
  2. ½ cup (100g) powdered sugar
  3. 1 teaspoon vanilla extract
  4. 1 ¾ cups (220g) all-purpose flour
  5. ¼ cup (30g) cornstarch
  6. ¼ teaspoon salt
  7. Optional: Granulated sugar for coating

Instructions

  • Prepare the Dough:

    • In a bowl, beat butter and powdered sugar until light and fluffy. Add vanilla extract and mix well.
  • Mix Dry Ingredients:

    • Sift together the flour, cornstarch, and salt. Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
  • Chill the Dough:

    • Shape the dough into a log, wrap it in plastic wrap, and chill for at least 30 minutes.
  • Slice & Bake:

    • Preheat the oven to 325°F (160°C). Slice the dough into ½-inch rounds and place them on a lined baking sheet.
    • Bake for 12–15 minutes, or until the edges are slightly golden.

Notes

  • For an extra touch, you can roll the dough slices in granulated sugar before baking for a slightly crisp exterior.
  • These cookies are best enjoyed with a cup of tea or coffee!
  • If you don’t have cornstarch, you can substitute it with an additional 2 tablespoons of all-purpose flour.
