These Mediterranean Salmon Patties combine fresh salmon with bold Mediterranean flavors like feta, Kalamata olives, and fresh herbs.   1. 1 lb fresh salmon fillet, skinless, finely chopped (or canned salmon, drained)
  2. 1/2 cup breadcrumbs
  3. 1/4 cup crumbled feta cheese
  4. 1/4 cup Kalamata olives, pitted and chopped
  5. 2 tablespoons fresh parsley, chopped
  6. 1 tablespoon fresh dill, chopped
  7. 1 large egg, beaten
  8. 1 teaspoon lemon zest
  9. 1 tablespoon lemon juice
  10. 1/2 teaspoon garlic powder
  11. 1/4 teaspoon black pepper
  12. 1/4 teaspoon salt
  13. 2 tablespoons olive oil (for frying)
  14. Tzatziki sauce or lemon wedges (for serving)

Instructions

  • Prepare the mixture: In a large bowl, combine chopped salmon, breadcrumbs, feta cheese, Kalamata olives, parsley, dill, egg, lemon zest, lemon juice, garlic powder, black pepper, and salt. Mix until well incorporated.
  • Form the patties: Shape the mixture into 6–8 patties, about 1/2-inch thick. Place on a plate and refrigerate for 15 minutes to firm up (optional but helps hold shape).
  • Cook the patties: Heat olive oil in a large skillet over medium heat. Fry patties for 3–4 minutes per side, or until golden brown and cooked through (internal temperature should reach 145°F/63°C).

 

  • Serve: Serve warm with tzatziki sauce or lemon wedges on the side. Enjoy your Mediterranean-inspired patties!
