Description

This Mediterranean Ground Beef Stir Fry is a quick and healthy meal packed with vibrant vegetables and topped with crumbled feta cheese. Perfect for a light dinner or meal prep, this dish combines the rich flavors of ground beef, zucchini, bell peppers, and a touch of tangy lemon juice.


Ingredients

  1. 1 lb ground beef

  2. 1 tablespoon olive oil

  3. 1 small red onion, sliced

  4. 2 cloves garlic, minced

  5. 1 zucchini, sliced

  6. 1 red bell pepper, sliced

  7. 1 teaspoon dried oregano

  8. 1/2 teaspoon ground cumin

  9. 1/2 teaspoon paprika

  10. Salt and black pepper to taste

  11. 1/4 cup feta cheese, crumbled

  12. 2 tablespoons fresh parsley, chopped

  13. 1 tablespoon lemon juice


Instructions

  • Cook the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and fully cooked (about 7-8 minutes). Drain any excess fat and transfer the beef to a plate.

  • Sauté the Vegetables: In the same skillet, add olive oil and heat over medium heat. Add the sliced red onion and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.

  • Combine and Season: Add the sliced zucchini and red bell pepper to the skillet. Cook for about 5 minutes until slightly tender. Return the cooked ground beef to the skillet. Stir in dried oregano, cumin, paprika, salt, and black pepper. Mix well and let cook for another 2-3 minutes.

 

  • Finish and Serve: Remove from heat and stir in lemon juice for added freshness. Sprinkle with crumbled feta cheese and chopped fresh parsley before serving.


Notes

  • You can use lean ground turkey or chicken as a substitute for ground beef for a lighter option.

  • If you prefer more spice, add some red chili flakes or a dash of hot sauce.
