Description

A Mediterranean-inspired stir fry featuring ground beef, sautéed vegetables, and a sprinkle of feta cheese and fresh parsley for added flavor.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and fully cooked (about 7-8 minutes). Drain any excess fat and transfer the beef to a plate.
  2. In the same skillet, add olive oil and heat over medium heat. Add the sliced red onion and cook for 2-3 minutes until softened.
  3. Stir in the minced garlic and cook for another 30 seconds.
  4. Add the sliced zucchini and red bell pepper to the skillet. Cook for about 5 minutes until slightly tender.
  5. Return the cooked ground beef to the skillet. Stir in dried oregano, cumin, paprika, salt, and black pepper. Mix well to combine and let cook for another 2-3 minutes.
  6. Remove from heat and stir in lemon juice for added freshness. Sprinkle with crumbled feta cheese and chopped fresh parsley before serving.

Notes

  • For a spicier version, add a pinch of red pepper flakes along with the seasonings.
  • If you prefer a dairy-free option, skip the feta cheese and replace it with a dairy-free cheese alternative.
  • This dish pairs well with a side of quinoa, couscous, or rice for a more filling meal.
