Description
A Mediterranean-inspired stir fry featuring ground beef, sautéed vegetables, and a sprinkle of feta cheese and fresh parsley for added flavor.

- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small red onion, sliced
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and fully cooked (about 7-8 minutes). Drain any excess fat and transfer the beef to a plate.
- In the same skillet, add olive oil and heat over medium heat. Add the sliced red onion and cook for 2-3 minutes until softened.
- Stir in the minced garlic and cook for another 30 seconds.
- Add the sliced zucchini and red bell pepper to the skillet. Cook for about 5 minutes until slightly tender.
- Return the cooked ground beef to the skillet. Stir in dried oregano, cumin, paprika, salt, and black pepper. Mix well to combine and let cook for another 2-3 minutes.
- Remove from heat and stir in lemon juice for added freshness. Sprinkle with crumbled feta cheese and chopped fresh parsley before serving.
Notes
- For a spicier version, add a pinch of red pepper flakes along with the seasonings.
- If you prefer a dairy-free option, skip the feta cheese and replace it with a dairy-free cheese alternative.
- This dish pairs well with a side of quinoa, couscous, or rice for a more filling meal.
