This Mediterranean Cucumber and Tomato Salad is a refreshing, healthy dish perfect for any meal. Packed with fresh cucumbers, juicy tomatoes, and tangy feta cheese, it’s a simple yet flavorful salad that can be served chilled or at room temperature. The light olive oil and lemon dressing with oregano adds the perfect Mediterranean touch!

Ingredients

  1. 46 cucumbers (preferably English or Greek), peeled and thinly sliced
  2. 23 large tomatoes, diced
  3. ½ cup red onion, thinly sliced
  4. ¼ cup extra-virgin olive oil
  5. 2 tbsp freshly squeezed lemon juice
  6. 1 tsp dried oregano
  7. Salt and pepper to taste
  8. ¼ cup crumbled feta cheese (optional)
  9. Fresh parsley or dill, chopped (optional)

Instructions

  • In a large bowl, combine the sliced cucumbers and diced tomatoes.
  • Add the thinly sliced red onion to the bowl.
  • In a small bowl, whisk together the olive oil, lemon juice, and dried oregano.
  • Pour the dressing over the cucumber and tomato mixture, and toss to combine.
  • Season the salad with salt and pepper to taste.
  • If using, crumble the feta cheese over the salad and sprinkle with chopped parsley or dill.

 

  • Serve the salad chilled or at room temperature. Enjoy!

  • This salad can be made ahead of time and stored in the refrigerator for a few hours to allow the flavors to meld together.
