  1. Chicken Marinade:

    • 1 lb boneless, skinless chicken breasts, cut into strips
    • 3 tbsp olive oil
    • 3 tbsp plain Greek yogurt
    • 1 tbsp lemon juice
    • 3 cloves garlic, minced

    • 1 tsp ground cumin
    • ½ tsp smoked paprika
    • ½ tsp salt
    • ¼ tsp black pepper

    Rice Base:

    • 1½ cups white rice
    • 3 cups chicken broth or water
    • 1 tbsp olive oil
    • 1 tsp dried oregano
    • ½ tsp garlic powder
    • ¼ tsp salt

    Tzatziki Sauce:

    • 1 cup plain Greek yogurt
    • ½ cucumber, grated and squeezed dry
    • 1 tbsp lemon juice
    • 1 tbsp olive oil
    • 1 clove garlic, minced
    • 1 tsp dried dill
    • Salt and pepper, to taste

    Toppings:

    1. 1 cup cherry tomatoes, halved
    2. ½ red onion, thinly sliced
    3. ½ cup cucumber, diced
    4. ¼ cup feta cheese, crumbled
    5. ¼ cup kalamata olives, sliced
    6. Fresh parsley or dill, for garnish
    7. Lemon wedges

Instructions

  1. Marinate the Chicken:

    • In a bowl, mix olive oil, Greek yogurt, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add chicken, toss to coat, and marinate for at least 20 minutes.
  2. Cook the Rice:

    • Rinse rice under cold water until the water runs clear. Heat olive oil in a pot over medium heat. Add rice, oregano, garlic powder, and salt. Stir for 1 minute. Add broth or water, bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes, then remove from heat and let sit for 5 minutes before fluffing.
  3. Make the Tzatziki Sauce:

    • In a bowl, combine Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper. Mix well and refrigerate until ready to use.
  4. Cook the Chicken:

    • Heat a skillet over medium-high heat. Add marinated chicken and cook for 4-5 minutes per side, until browned and cooked through.
  5. Assemble the Bowls:

    • Divide rice into bowls. Top with cooked chicken, cherry tomatoes, red onion, cucumber, feta, and olives. Drizzle with tzatziki sauce and garnish with fresh herbs and lemon wedges.
