Description

A delicious and budget-friendly tuna salad that stretches just two cans of tuna into a hearty, flavor-packed dish! This tuna salad is made with sweet and tangy ingredients like honey, wasabi, and a mix of veggies that will surprise your taste buds. Perfect for a family meal or a crowd-pleasing dish.

Ingredients

Scale
  1. 2 cans tuna, drained
  2. 1 cup mayonnaise
  3. 1 tablespoon white vinegar
  4. 2 tablespoons lemon juice
  5. 1 tablespoon honey (or agave)
  6. 1 tablespoon wasabi (or horseradish)
  7. 1/2 cup corn
  8. 1/2 cup peas
  9. 1 medium red onion, chopped
  10. 1 green apple, chopped
  11. 56 sweet gherkin pickles, chopped
  12. A sprinkle of breaded fried jalapeños (or French fried onions)

Instructions

  • Prepare the Ingredients: In a large mixing bowl, drain the tuna cans and add the tuna to the bowl.
  • Make the Dressing: In a separate bowl, mix the mayonnaise, white vinegar, lemon juice, honey (or agave), and wasabi (or horseradish).
  • Add Vegetables and Fruits: To the tuna, add the chopped red onion, green apple, corn, peas, and sweet gherkin pickles.
  • Combine Everything: Pour the dressing over the tuna mixture and stir well to combine.
  • Top it Off: Sprinkle a handful of breaded fried jalapeños (or French fried onions) for an added crunch and burst of flavor.
  • Serve: This tuna salad is great on its own, as a sandwich filling, or as a topping for a fresh salad

Notes

  • This recipe is very adaptable. Feel free to swap out the sweet gherkins with dill pickles if you prefer a tangier flavor.
  • For a dairy-free version, opt for vegan mayo.
  • If you don’t have wasabi, horseradish provides a similar heat and flavor profile.
