For the Salmon:
- 4 salmon fillets (6 oz each, skinless or with skin)
- 2 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
For the Sauce:
- 2 Tbsp unsalted butter
- 3–4 garlic cloves, minced
- 1 cup heavy cream
- 1/3 cup chicken broth (or vegetable broth)
- 1/2 cup grated Parmesan cheese
- 1/2 tsp chili flakes (optional, for heat)
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp dried basil (or Italian seasoning)
- 1/2 cup fresh spinach, chopped
- Salt & pepper to taste
Instructions
- Prep the Salmon: Pat the salmon fillets dry and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Cook the Salmon: Heat olive oil in a large skillet over medium heat. Sear the salmon fillets for 3-4 minutes per side until golden and cooked to your desired doneness. Remove and set aside.
- Make the Sauce: In the same skillet, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream, chicken broth, and Parmesan cheese. Mix well until the cheese is melted and the sauce thickens slightly.
- Add Flavor: Stir in chili flakes (if using), sun-dried tomatoes, and dried basil. Simmer for 2-3 minutes.
- Combine & Finish: Add fresh spinach and stir until wilted. Return the salmon fillets to the skillet, spoon the creamy sauce over the salmon, and let everything simmer for 2 minutes to combine the flavors.
- Serve: Garnish with fresh basil or parsley if desired. Serve warm with rice, mashed potatoes, or pasta.
Notes
- Adjust the seasoning to taste, and feel free to add extra chili flakes for more heat.
- For a richer sauce, use half-and-half instead of heavy cream.
