This Marry Me Salmon features perfectly cooked salmon fillets, seared to golden perfection, and drenched in a rich, creamy sauce made with sun-dried tomatoes, Parmesan, and fresh spinach. It’s a decadent yet easy-to-make dish that’s sure to impress for any special occasion or weeknight dinner. Perfect with rice, mashed potatoes, or pasta!

  1. For the Salmon:

    • 4 salmon fillets (6 oz each, skinless or with skin)
    • 2 Tbsp olive oil
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp smoked paprika
    • Salt & pepper to taste

    For the Sauce:

    1. 2 Tbsp unsalted butter
    2. 34 garlic cloves, minced
    3. 1 cup heavy cream
    4. 1/3 cup chicken broth (or vegetable broth)
    5. 1/2 cup grated Parmesan cheese
    6. 1/2 tsp chili flakes (optional, for heat)
    7. 1/2 cup sun-dried tomatoes, chopped
    8. 1 tsp dried basil (or Italian seasoning)
    9. 1/2 cup fresh spinach, chopped
    10. Salt & pepper to taste

Instructions

  • Prep the Salmon: Pat the salmon fillets dry and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Cook the Salmon: Heat olive oil in a large skillet over medium heat. Sear the salmon fillets for 3-4 minutes per side until golden and cooked to your desired doneness. Remove and set aside.
  • Make the Sauce: In the same skillet, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream, chicken broth, and Parmesan cheese. Mix well until the cheese is melted and the sauce thickens slightly.
  • Add Flavor: Stir in chili flakes (if using), sun-dried tomatoes, and dried basil. Simmer for 2-3 minutes.
  • Combine & Finish: Add fresh spinach and stir until wilted. Return the salmon fillets to the skillet, spoon the creamy sauce over the salmon, and let everything simmer for 2 minutes to combine the flavors.
  • Serve: Garnish with fresh basil or parsley if desired. Serve warm with rice, mashed potatoes, or pasta.

Notes

  • Adjust the seasoning to taste, and feel free to add extra chili flakes for more heat.
  • For a richer sauce, use half-and-half instead of heavy cream.
