Instructions

  • Season and pan-sear chicken: Season chicken thighs with onion powder, garlic powder, Cajun seasoning, pepper, paprika, and Italian herbs. Heat olive oil in a skillet over medium heat and pan-sear the chicken thighs until golden brown on both sides. Transfer the chicken to a separate pan.

  • Prepare the sauce: In the same skillet, add butter and minced garlic. Cook for about 3 minutes until fragrant. Add chicken broth, sun-dried tomatoes, and heavy whipping cream. Stir in seasoning and let simmer.

  • Add cheese: Stir in fresh shredded Parmesan or Italian cheese, and allow the sauce to thicken while stirring constantly.

  • Bake: Pour the sauce over the seared chicken thighs. Bake in the oven at 400°F (200°C) for 30-35 minutes until the chicken is cooked through.

  • Serve: Serve the Marry Me Chicken over mashed potatoes, pasta, rice, or crusty bread.

Notes

  • You can adjust the spice level by increasing or decreasing the amount of red pepper flakes.
  • For a lighter option, substitute half-and-half or milk for the heavy cream, but note that the sauce will be slightly thinner.
  • This dish pairs wonderfully with mashed potatoes, rice, pasta, or a side of crusty bread to soak up the creamy sauce.
