- In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy. Use an electric mixer for best results.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
- Gently fold in the chopped maraschino cherries (make sure they’re well-drained and patted dry) and chocolate chips.
- Cover the dough and refrigerate for at least 30 minutes, or up to 24 hours. Chilling helps prevent the cookies from spreading too much and enhances their flavor.
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. Bake for 9-11 minutes, or until the edges are golden brown, but the centers remain slightly soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
