Description

Deliciously sweet and chewy cookies with a perfect balance of maraschino cherries and chocolate chips, offering a burst of fruity sweetness with every bite.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup maraschino cherries, drained and chopped (pat dry with paper towels)
  • 1 ½ cups chocolate chips (semi-sweet or your choice)

Instructions

  1. In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy. Use an electric mixer for best results.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
  5. Gently fold in the chopped maraschino cherries (make sure they’re well-drained and patted dry) and chocolate chips.
  6. Cover the dough and refrigerate for at least 30 minutes, or up to 24 hours. Chilling helps prevent the cookies from spreading too much and enhances their flavor.
  7. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. Bake for 9-11 minutes, or until the edges are golden brown, but the centers remain slightly soft.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Make sure to pat the maraschino cherries dry with paper towels to prevent excess moisture in the dough.
  • If you prefer a stronger cherry flavor, you can add more maraschino cherries to the dough.
  • For an extra touch, drizzle some melted chocolate over the cooled cookies.
  • The dough can be refrigerated for up to 24 hours, which enhances the flavor and texture of the cookies.
