Ingredients

Scale

Dough Ingredients

  • 2 teaspoons instant yeast
  • ¾ cup lukewarm water
  • ½ cup lukewarm whole milk
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1 tablespoon unsalted butter, melted
  • Vegetable oil, for frying

Glaze Ingredients

  • 4 tablespoons unsalted butter, browned
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • ½ cup powdered sugar

Instructions

Prepare the Dough

  1. In a bowl, dissolve yeast in lukewarm water and milk. Add sugar, salt, melted butter, and flour. Mix until a dough forms.
  2. Knead dough on a floured surface until smooth and elastic, about 8–10 minutes.
  3. Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1–1.5 hours.

Fry the Beaver Tails

  1. Heat vegetable oil in a deep pan to 350°F (175°C).
  2. Roll out dough to about ¼-inch thickness. Cut and shape into oval “beaver tail” shapes.
  3. Fry dough pieces in batches until golden brown on both sides, about 2–3 minutes per side.
  4. Drain on paper towels.

Make the Maple Glaze

  1. In a small saucepan, brown the butter over medium heat until fragrant and golden, then remove from heat.
  2. Whisk in vanilla extract, maple syrup, and powdered sugar until smooth.
  3. Brush glaze generously over warm fried dough.
  4. Serve immediately and enjoy!

Notes

  • For extra flavor, sprinkle a pinch of cinnamon on the glaze before serving.
  • Make sure oil temperature stays consistent for even frying.
  • Store leftovers in an airtight container and reheat briefly in the oven to retain crispness.
