Description

This Low-Carb Cream Cheese Breakfast Bake is a simple, satisfying, and diabetic-friendly way to start the day! Fluffy, rich, and lightly sweet, it’s like a crustless cheesecake-meets-eggy-breakfast bar. Toast slices for a French toast vibe! #LowCarbBreakfast #DiabeticFriendly #CreamCheeseBake

Ingredients

Scale

Ingredients

  • 8 large eggs
  • 1 (8 oz) block cream cheese, softened
  • 4 tsp unsalted butter, softened
  • 1 splash (about 1 tsp) vanilla extract

Instructions

Preheat oven:

  1. Set oven to 375°F (190°C). Grease an 8×8-inch baking dish or similar.

Blend ingredients:

  1. In a large bowl, combine eggs, cream cheese, butter, and vanilla. Beat with a hand mixer or whisk until smooth and fully incorporated.

Bake:

  1. Pour mixture into the prepared baking dish. Bake for 40–45 minutes, or until set in the center and lightly golden on top.

Cool and slice:

  1. Allow to cool slightly. Slice into squares or strips.

Notes

  • For a French toast-style breakfast: Toast slices on both sides in a skillet with a bit of butter until golden. Serve with sugar-free syrup or a sprinkle of cinnamon.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Can be frozen and reheated in a toaster oven or skillet.
