  • 1 lb ground turkey or ground chicken
  • ½ lb chicken livers, finely chopped (optional)
  • 1 ½ cups long-grain rice
  • 1 small onion, finely diced
  • 1 bell pepper, finely diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • ½ tsp dried thyme
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper (optional)
  • 2 ½ cups chicken broth
  • 2 tbsp vegetable oil
  • Salt and black pepper to taste
  • 3 green onions, chopped (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Meat
    Heat the vegetable oil in a large skillet over medium heat. Add the ground turkey or chicken and chicken livers (if using). Cook until browned, breaking the meat into small pieces. Season with a pinch of salt and black pepper.
  • Sauté the Vegetables
    Add the onion, bell pepper, celery, and garlic to the skillet. Cook until the vegetables are soft and fragrant, about 5 minutes.
  • Season and Simmer
    Stir in the Cajun seasoning, thyme, smoked paprika, and cayenne pepper (if using). Cook for 1-2 minutes, letting the spices toast and release their flavors.
  • Cook the Rice
    Add the uncooked rice to the skillet and stir to coat it with the seasonings and meat mixture. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  • Garnish and Serve
    Fluff the rice with a fork, stir in the green onions and fresh parsley, and taste for seasoning. Adjust salt and pepper as needed.
