Description

Loaded Potato & Meatloaf Casserole combines a savory meatloaf base topped with creamy mashed potatoes, shredded cheddar cheese, and green onions. A comforting and hearty dish perfect for family dinners.


Ingredients

  • 1.5 pounds ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup
  • 2 pounds potatoes, peeled and sliced
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Press the mixture into the bottom of a greased baking dish.
  3. Spread ketchup over the top of the meatloaf.
  4. Bake for 25 minutes.
  5. Meanwhile, boil the sliced potatoes until tender, about 15 minutes. Drain and mash with sour cream, milk, and butter. Season with salt and pepper.
  6. Spread the mashed potatoes over the partially cooked meatloaf. Sprinkle with cheddar cheese and green onions.
  7. Return to the oven and bake for another 20 minutes, or until the cheese is melted and bubbly.
  8. Let rest for 10 minutes before serving.

Notes

  • This casserole is great for meal prep and leftovers.
  • You can use russet or Yukon gold potatoes for the mashed potato layer.
  • If you prefer, you can add cooked bacon or other toppings to the mashed potatoes for extra flavor.
