Loaded Potato & Meatloaf Casserole combines a savory meatloaf base topped with creamy mashed potatoes, shredded cheddar cheese, and green onions. A comforting and hearty dish perfect for family dinners.

- 1.5 pounds ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
- 2 pounds potatoes, peeled and sliced
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Press the mixture into the bottom of a greased baking dish.
- Spread ketchup over the top of the meatloaf.
- Bake for 25 minutes.
- Meanwhile, boil the sliced potatoes until tender, about 15 minutes. Drain and mash with sour cream, milk, and butter. Season with salt and pepper.
- Spread the mashed potatoes over the partially cooked meatloaf. Sprinkle with cheddar cheese and green onions.
- Return to the oven and bake for another 20 minutes, or until the cheese is melted and bubbly.
- Let rest for 10 minutes before serving.
Notes
- This casserole is great for meal prep and leftovers.
- You can use russet or Yukon gold potatoes for the mashed potato layer.
- If you prefer, you can add cooked bacon or other toppings to the mashed potatoes for extra flavor.
