- 4 large baked potatoes, peeled and cubed
- 2 cups cooked chicken, shredded
- 1 cup sour cream
- ½ cup whole milk
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese, divided
- ½ cup chopped green onions, divided
- 1 cup bacon bits, divided
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch or similar-sized baking dish.
- In a large bowl, combine cubed potatoes, shredded chicken, sour cream, milk, salt, and pepper. Stir until evenly mixed.
- Spread half of the potato mixture into the prepared baking dish. Top with half of the cheddar cheese, green onions, and bacon bits.
- Add the remaining potato mixture, then sprinkle the rest of the cheese, green onions, and bacon on top.
- Bake uncovered for 30–35 minutes, or until the cheese is melted and bubbling and the top is lightly golden.
- Let the casserole rest for 5–10 minutes before serving.
