Description

This Loaded Baked Potato & Chicken Casserole is a cheesy, creamy, and savory dish packed with hearty potatoes, tender chicken, crispy bacon, and melty cheddar. It’s the ultimate comfort food for weeknights or gatherings.


Ingredients

  • 4 large baked potatoes, peeled and cubed
  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • ½ cup whole milk
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese, divided
  • ½ cup chopped green onions, divided
  • 1 cup bacon bits, divided

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch or similar-sized baking dish.
  2. In a large bowl, combine cubed potatoes, shredded chicken, sour cream, milk, salt, and pepper. Stir until evenly mixed.
  3. Spread half of the potato mixture into the prepared baking dish. Top with half of the cheddar cheese, green onions, and bacon bits.
  4. Add the remaining potato mixture, then sprinkle the rest of the cheese, green onions, and bacon on top.
  5. Bake uncovered for 30–35 minutes, or until the cheese is melted and bubbling and the top is lightly golden.
  6. Let the casserole rest for 5–10 minutes before serving.
