  • 3 cups light cream, divided
  • ⅛ teaspoon baking soda
  • 2¼ teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper

Mix-Ins

  • 2 ounces freshly grated Parmesan cheese (about 1 cup)
  • 11 tablespoons butter, divided

Topping

  • 1 cup plain Panko crumbs

Instructions

Cook Potatoes

  1. Preheat oven to 375°F (190°C). Butter a medium casserole dish and set aside.
  2. In a large pot, combine potatoes, 2 cups light cream, baking soda, 1½ teaspoons salt, and black pepper.
  3. Bring to a gentle boil, then reduce heat and simmer until potatoes are just fork-tender, about 15 minutes.
  4. Drain the potatoes well.

Assemble Casserole

  1. Transfer the cooked potatoes to the buttered casserole dish and mash gently—leave a bit of texture.
  2. Stir in Parmesan cheese and 3 tablespoons butter until well incorporated.

Make Topping

  1. In a small bowl, mix Panko crumbs with remaining 8 tablespoons melted butter and ¾ teaspoon salt.
  2. Sprinkle the Panko topping evenly over the mashed potatoes.

Bake & Serve

  1. Bake uncovered for 30–40 minutes, or until the top is golden brown and crispy.
