Description

A refreshing twist on the classic tiramisu, this Lemon Tiramisu layers lemonade-soaked Ladyfingers with creamy mascarpone and tangy lemon curd, topped with fresh garnishes for a perfect sweet and citrusy dessert.


Ingredients

  • ¾ cup lemonade (Simply Lemonade is a great option)
  • 12 ounce Ladyfingers (buy 2 packs of 7 ounces each)
  • 1 ½ cups lemon curd (homemade or store-bought)
  • 1 ½ cups heavy whipping cream
  • 1 tablespoon lemon zest
  • ⅔ cup powdered sugar
  • ¼ cup instant lemon pudding mix (you won’t need the whole package)
  • 8 ounces mascarpone cheese

Instructions

  1. Spray a 9-inch square baking dish with nonstick spray and set aside.
  2. Pour lemonade into a small shallow dish or bowl. Dip the Ladyfingers into the lemonade, turning to fully coat. Allow excess lemonade to drip off, then place Ladyfingers in a single layer in the prepared baking dish.
  3. Spread about half of the lemon curd evenly over the Ladyfingers layer.
  4. In a large mixing bowl, combine the heavy cream and lemon zest. Beat with a hand mixer or stand mixer for 1-2 minutes. Gradually add powdered sugar and lemon pudding mix, continue beating, and scrape down the sides and bottom of the bowl as needed, until the mixture is thick and creamy.
  5. Add mascarpone cheese to the mixture and beat until smooth and well-combined. Spread half of this pudding mixture over the lemon curd layer.
  6. Dip another layer of Ladyfingers in the lemonade and place on top of the pudding layer. Spread the remaining lemon curd over the second layer of Ladyfingers.
  7. Gently spread the remaining pudding mixture evenly on top of the lemon curd.
  8. Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, or overnight.
  9. Before serving, garnish with lemon slices, strawberries, and fresh mint if desired. Cut into squares and enjoy!

Notes

  • Use fresh lemon curd for an even brighter flavor, or store-bought for convenience.
  • For extra tang, you can add a bit more lemon zest into the pudding mixture.
  • Make sure to let the dessert chill for at least 6 hours for the flavors to meld.
