Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats. - Make the Cookie Dough:
In a large mixing bowl, beat the butter and sugar together until light and fluffy.
Add the eggs, one at a time, mixing well after each addition.
Mix in the lemon juice, lemon zest, and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. - Shape and Bake:
Scoop spoonfuls of the dough and shape them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden. - Prepare the Lemon Glaze:
In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Adjust the consistency with more lemon juice or powdered sugar as needed. - Glaze the Cookies:
