  1. 1 cup unsalted butter, softened
  2. 1 cup granulated sugar
  3. 2 large eggs
  4. 1 teaspoon vanilla extract
  5. 2 tablespoons fresh lemon juice
  6. 1 tablespoon lemon zest
  7. 2 cups all-purpose flour
  8. 1/2 teaspoon baking powder
  9. 1/4 teaspoon salt
  10. 1/2 cup powdered sugar (for coating)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract, lemon juice, and lemon zest.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  • Using a spoon or cookie scoop, form small dough balls and roll them in powdered sugar.
  • Place on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden.

 

  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
