For the cookies:
- 2 ½ cups quick oats
- ½ cup unsalted butter
- 1 cup granulated sugar
- ½ cup milk
- 1 Tbsp lemon zest (from about 1 lemon)
- 2 Tbsp fresh lemon juice
- 1 tsp vanilla extract
- Pinch of salt
For the lemon glaze:
- 1 cup powdered sugar
- 2–3 Tbsp fresh lemon juice
- ½ tsp lemon zest
Instructions
- Prepare a baking sheet: Line a baking sheet with parchment paper or a silicone mat.
- Cook the wet ingredients: In a medium saucepan over medium heat, melt the butter, then stir in the sugar, milk, and lemon zest. Bring to a gentle boil and let it cook for 1-2 minutes while stirring.
- Mix in the oats: Remove from heat and stir in the oats, lemon juice, vanilla extract, and a pinch of salt. Mix well until everything is combined.
- Form the cookies: Scoop about 1 ½ tablespoons of the mixture onto the prepared baking sheet, shaping them into flat cookies. Let them set at room temperature for 30-45 minutes or until firm.
- Make the glaze: In a small bowl, whisk together powdered sugar, lemon juice, and zest until smooth.
- Glaze & Set: Drizzle or dip the cookies in the lemon glaze and allow them to set for 15 minutes until the glaze hardens.
Notes
- If you want a stronger lemon flavor, feel free to add extra lemon zest to the glaze.
- Make sure the cookies are fully set before serving for the best texture.
