- 4 large garlic cloves
- 1 1/2 tablespoons dried oregano
- 6 skin-on, bone-in chicken thighs

Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk together lemon juice, olive oil, smashed garlic, yellow mustard, salt, pepper, dried oregano, and garlic powder.
- Add chicken thighs and potatoes to the bowl; toss to coat evenly in marinade.
- Arrange chicken and potatoes in a single layer on a large baking sheet or roasting pan.
- Roast for 40–50 minutes, turning potatoes halfway, until chicken is cooked through and potatoes are tender and golden.
- Garnish with fresh oregano before serving.
- For the cottage cheese variation:
- Blend cottage cheese, lemon juice, lemon zest, kosher salt, ground pepper, garlic cloves, and dried oregano until smooth.
- Marinate chicken thighs in the cottage cheese mixture for at least 1 hour (or overnight) before cooking.
- Follow steps 3–6 as above for roasting with potatoes.
- Garnish with fresh dill, fresh mint, and lemon wedges.
