  • Juice of 3 lemons
  • 1/2 cup olive oil
  • 10 garlic cloves, smashed
  • 6 skin-on, bone-in chicken thighs
  • 1 1/2 tablespoons yellow mustard
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 1/2 tablespoons dried oregano
  • 2 1/2 teaspoons garlic powder
  • Fresh oregano, for garnish
  • Variation – Cottage Cheese Lemon Marinated Chicken & Potatoes:
  • 1/2 cup Good Culture cottage cheese
  • 2 tablespoons lemon juice
  • 1 lemon, zested
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  • 4 large garlic cloves
  • 1 1/2 tablespoons dried oregano
  • 6 skin-on, bone-in chicken thighs
  • 5 medium yellow-fleshed potatoes, cut into wedges then halved (2 inch pieces)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together lemon juice, olive oil, smashed garlic, yellow mustard, salt, pepper, dried oregano, and garlic powder.
  3. Add chicken thighs and potatoes to the bowl; toss to coat evenly in marinade.
  4. Arrange chicken and potatoes in a single layer on a large baking sheet or roasting pan.
  5. Roast for 40–50 minutes, turning potatoes halfway, until chicken is cooked through and potatoes are tender and golden.
  6. Garnish with fresh oregano before serving.
  7. For the cottage cheese variation:
  8. Blend cottage cheese, lemon juice, lemon zest, kosher salt, ground pepper, garlic cloves, and dried oregano until smooth.
  9. Marinate chicken thighs in the cottage cheese mixture for at least 1 hour (or overnight) before cooking.
  10. Follow steps 3–6 as above for roasting with potatoes.
  11. Garnish with fresh dill, fresh mint, and lemon wedges.
