Ingredients

Scale
  1. 1 box lemon cake mix
  2. 1 can (21 oz) lemon pie filling
  3. 8 oz cream cheese, softened
  4. 1/2 cup powdered sugar
  5. 1/2 cup unsalted butter, melted
  6. 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Spread the lemon pie filling evenly in the bottom of the prepared baking dish.
  • In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Drop spoonfuls of the cream cheese mixture over the lemon pie filling.
  • Sprinkle the dry lemon cake mix evenly over the top of the cream cheese layer.
  • Drizzle the melted butter evenly over the cake mix. Ensure you cover as much of the cake mix as possible for even baking.
  • Bake for 40-45 minutes, or until the top is golden brown and bubbly. Let cool for 10-15 minutes before serving.
  • Serve warm or at room temperature with whipped cream or vanilla ice cream, if desired.

Notes

  • This cake is super easy to make and can be customized with other fruit pie fillings (like cherry or blueberry) if you prefer.
  • Top with whipped cream, vanilla ice cream, or fresh berries for extra indulgence.
  • Let the cake cool for 10–15 minutes before serving so it sets nicely.
