For the Bread:
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup sugar
- 2 eggs
- 1 tbsp lemon zest
- ½ cup sour cream
- ¼ cup lemon juice
- 1 tsp vanilla extract
For the Cream Cheese Filling:
- 4 oz cream cheese, softened
- ¼ cup sugar
- 1 egg yolk
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat butter and sugar until fluffy. Add eggs, lemon zest, sour cream, lemon juice, and vanilla extract. Mix well.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla extract until smooth.
- Pour half of the batter into the prepared loaf pan. Spread the cream cheese mixture on top, then cover with the remaining batter.
- Bake for 45-50 minutes, or until golden and set. Cool before slicing.
Notes
- For extra flavor, you can top the bread with a lemon glaze or a dusting of powdered sugar after baking.
- This bread keeps well for a couple of days in an airtight container. For longer storage, freeze slices individually.
