Description

  2. Premade lemon pie filling (store-bought, usually canned)
  3. Powdered sugar for dusting

Instructions

  • Preheat the oven and grease a mini muffin pan.
  • Take the premade sugar cookie dough cubes and place one cube in each muffin cup.
  • Bake the sugar cookie dough according to package directions.
  • Once baked, use a spoon or shot glass to press the center of the cookie to form a cup shape. (Watch the video before this one for an easy demonstration.)
  • Let the cookie cups cool in the pan. To speed up the cooling, place the pan in the freezer for about 10 minutes.
  • After the cookies are cooled, gently twist them out of the muffin pan.
  • Spoon a dollop of premade lemon pie filling into each cookie cup.
  • Dust the tops with powdered sugar.
