Description

This Lemon Chicken & Veggie Orzo Stir Fry is a zesty, colorful one-pan meal that’s bursting with flavor! Packed with chicken, veggies, and a fresh lemony kick, it’s the perfect quick dinner for busy weeknights.


Ingredients

  1. 1 cup orzo
    1 lb diced chicken breast
    1 zucchini, chopped
    1 red bell pepper, chopped
    1 cup broccoli florets
    2 tbsp lemon juice
    1 tsp lemon zest
    2 tbsp olive oil
    ¼ cup grated Parmesan
    1 tsp garlic powder
    ½ tsp salt
    ¼ tsp black pepper
    ½ tsp dried oregano
    ¼ tsp red pepper flakes (optional)
    Fresh parsley (for garnish)

Instructions

Cook orzo according to package instructions, drain, and set aside.
Heat 1 tbsp olive oil in a skillet. Cook diced chicken with garlic powder, salt, and black pepper until browned. Remove from skillet.
Add remaining 1 tbsp olive oil to the skillet. Sauté zucchini, red bell pepper, and broccoli for 3–4 minutes.
Add chicken and cooked orzo back into the skillet. Stir in lemon juice, lemon zest, oregano, and red pepper flakes. Cook for another 2 minutes.
Sprinkle with grated Parmesan and fresh parsley before serving.


Notes

For extra protein, you can add chickpeas or more chicken. You can also switch the veggies based on what you have on hand, such as swapping broccoli for spinach or asparagus.
