This easy baked chicken recipe requires only 3 ingredients! Juicy chicken breasts, creamy spinach artichoke dip, and melty cheese come together for a quick, low-carb meal that’s perfect for busy weeknights. Even picky eaters will love it

  1. 12 pounds boneless, skinless chicken breasts (see notes)
  2. 1 (10-16oz) container spinach artichoke dip (or any cream cheese-based dip)
  3. 1 heaping cup shredded cheese (cheddar or mozzarella)

Instructions

  • Preheat oven to 375°F and grease a 9×13 baking dish.
  • Pound chicken breasts to an even thickness or slice them lengthwise for faster cooking. Cut into manageable portions if desired.
  • Arrange chicken in the baking dish and spread a thick layer of spinach artichoke dip over top. (You may not need the entire container, depending on the amount of chicken.)
  • Sprinkle shredded cheese evenly over the top.
  • Bake uncovered for 30 minutes, or until the chicken reaches an internal temperature of 165°F.

 

  • Serve alone or pair with buttered noodles, rice, roasted potatoes, garlic bread, salad, or veggies.

Notes

  • Use store-bought spinach artichoke dip for a quick option, or make your own if you prefer.
  • For a faster cooking time, slice the chicken breasts in half horizontally.

 

  • You can substitute mozzarella or cheddar with any cheese of your preference, like gouda or provolone.
