This quick and easy Lazy Enchiladas recipe gives you all the delicious flavors of traditional enchiladas, without the extra effort! With layers of seasoned ground beef, tortilla chips, cheese, and enchilada sauce, it’s a meal the whole family will love.

  1. 1 pound ground beef (can be substituted for shredded chicken or ground turkey)
  2. 1 bag tortilla chips (about 12 ounces)
  3. 3 cups shredded cheese (cheddar or a blend)
  4. 28 ounce can of red enchilada sauce
  5. 4 ounce can of diced green chilies, drained
  6. 1 teaspoon ground cumin
  7. ½ cup salsa

Instructions

  • Preheat oven to 350℉ (175°C).
  • In a skillet, brown the ground beef over medium heat and drain any excess fat.
  • Add the diced green chilies, salsa, and cumin to the beef, stirring to combine. Set aside.
  • In a large mixing bowl, pour in the tortilla chips and gently break them up into smaller pieces.
  • Pour the seasoned beef mixture over the tortilla chips and mix gently.
  • Pour the entire can of enchilada sauce over the beef and chip mixture.
  • Add 1 cup of shredded cheese to the bowl and mix until everything is well combined.
  • Spray a baking dish with non-stick spray and pour the enchilada mixture into the dish.
  • Sprinkle the remaining 2 cups of shredded cheese over the top, covering the dish completely.
  • Cover the baking dish with foil and bake for 50 minutes.

Notes

  • For a spicier version, add more salsa or use a hotter variety of enchilada sauce.
  • If you’re using shredded chicken or ground turkey, ensure they are well-seasoned to mimic the flavor of beef.
  • Leftovers can be stored in an airtight container in the fridge for 2-3 days.
