1 lb ground beef (or use shredded chicken/ground turkey)
1 bag tortilla chips (about 12 oz)
3 cups shredded cheese
1 (28 oz) can red enchilada sauce
1 (4 oz) can diced green chilies, drained
1 tsp ground cumin
½ cup salsa
Preheat the oven to 375°F.
In a skillet, cook the ground beef until browned. Drain any excess grease.
Stir in cumin, salsa, green chilies, and 1 cup of enchilada sauce. Let simmer for 5 minutes.
In a baking dish, layer half the tortilla chips, then half the beef mixture, and sprinkle with 1½ cups of cheese.
Repeat layers: chips, beef, remaining cheese.
Pour the remaining enchilada sauce evenly over the top.
Bake uncovered for 20–25 minutes or until cheese is melted and bubbly.
Let cool slightly and serve warm.
You can easily swap out the ground beef for shredded chicken or ground turkey to fit your preference.
